My picture shows the historical Burton Union Sets (fermentation system) at Thornbridge Brewery, Bakewell, Derbyshire, UK.
Well done Thornbridge for getting hold of these and putting them to good use.
On Monday this week they were being emptied of the second batch of a Burton Ale being brewed in collaboration with Kernel Brewery.
And they were serving the best pint of Jaipur IPA that I ever tasted. A great way to spend my birthday! #ale #brewing #beer #thornbridgebrewery #bakewell #ipa

It's great to see a different method being used for brewing. I'd never heard of this before.

Hi @Naich
Yeah this method of recirculating the fermenting beer was invented in the 1830s so has been used for about 190 years.
It is a very labour intensive method so has fallen out of favour with all but a few (genuine) craft breweries. The Thornbridge website has information about how and why they got involved. I've got to say that the effort is well worth it if the taste of Thornbridge 'Union' is anything to go by.

This is why I can't wait to retire, so I can try out different ways of brewing in my own time.
