May I suggest? You don't have to sign in an Apple account but the credit card should be on a different name (someone must buy it for you), but SIM/eSIM/mobile plans with different name. (They also buy it for you but you pay Cash).

The OS is a black box, not like android is much better, but there are open source ROMs on the few models on which it can be installed. What guarantee do you have that an iPhone doesn't track everything you do?
