Hmmm. That's a tough one. It definitely isn't NextCloud. I've spent too many hours dealing with its crap. But I probably use it more than anything else I've got. Vaultwarden might beat it. Home Assistant is definitely the most fun thing I host though.
@jameswynn Vaultwarden is a good one! I really like my Hoarder instance for saving and archiving bookmarks. My *arr and Plex stack has been kicking ass for a few years now. I like Linkstack too.
