funnily enough it gets referenced again in Deep Space Nine, but this time talking about how it was solved "300 years ago" and Tobin Dax came up with an alternative approach to it as a hobby
Star Trek isn't a fortune teller, it's a mirror. A lot of times, a darker tinted one (I have ranted at friends about how it doesn't make sense for the 24th century to have scathing hate for us, when we don't have scathing hate for Rome or Imperial England.)
Thing is, if you need a good in-universe reason why... Star Trek doesn't exist in Star Trek. We're going to have our dark times, but the butterfly effect that caused Trek's universe to divulge from our own was a bad one.
In our universe, Picard spoke about the theorem, so it was more pervasive in our cultural knowledge and so it was more likely to be solved... Or that it wouldn't be solved in the fictional universe.
I just thought of this chain of events that would not have happened without Star Trek, there would be substantially less electric car chargers in the US.
Star Trek inspires Motorola engineers, they create the StarTac line of cellphones.
In 1997, A group of Motorola designers take the StarTac 70, and behind the backs of their supervisors make cases in wild colors. The StarTac Rainbow/Harlequin (depending on region was made.
In 2000, Volkswagen takes inspiration, and creates the Harlequin. A VW Golf which has been painted a bright color and then has body panels switched around to make it similarly multi colored to the StarTac. While the car is rare, it keeps VW sales up in the US.
In 2009, Volkswagen was found to be cheating emissions testing and was prosecuted. On top of a large fine and forced recall, VW was required to bankroll an electric charging station company, Electrify America.
In 2012, Tesla released the Model S. One of the first electric cars to reach a large market adoption. Electrify America stations made the cars more logical to own than b

I'm sure you can think of other things if you try. There was a Mad TV joke about an Apple iPad feminine product years before the iPad release. They could have called it the iSlate or iTab, but I think "pad" felt necessary to make the connection to "padd" from TNG+.
In one short story, Isaac Asimov explained how the Everest was never going to be climbed. He sent the story, and by the time it was published few months later, the Everest was already climbed.

Yeah. That's the ticket.

But otherwise, sure!
