No sourdough this week, but I did make #bagels. This time I hit a small bump on the learning curve with the new oven. I had it in my head that I could put the stone on the upper rack in the upper oven, but it turns out that’s just a bit too close to the broiler element, and the two plain bagels that were in the center of the pan got a bit scorched. Live and learn! Otherwise these shaped up nicely, and the Modernist Baking slurry method for topping once again worked out pretty well. #baking
